Bora Bean & Potato Curry Recipe

  Ingredients 1/3 cup cooking oil Pinch of mustard seeds 1 onion (finely chopped) 6-7 cloves of garlic (crushed) 10-15 curry leaves 1/2 teaspoon curry powder 1 teaspoon masala powder 1 bundle bora bean (peeled and washed) 1 potato (finely chopped) Pinch of aafoetida Salt to taste 2 to 3 chillies 3-4 tomatoes 1/2 cup water (hot) Handful of coridander (finely chopped)  Methods    1) In a heated pot, add the cooking oil. Once the oil has heated, add a pinch of cumin seeds. 2) Add onions and garlic and saute' until light brown. Also, add curry leaves, tumeric and masala powder and saute' for a few seconds. 3)  Add the chopped potato and bora beans. Also, add salt to taste & pinch of asafoetida. Mix to combine and the ingredients and cover with the lid and cook for 5 minutes. 4) Add  water, mix to combine and cook for 10 minutes. 5)  Add tomatoes and coriander, cook for minutes. *Delicious boran bean and potato curry is ready to serve!   

Saijan or Moringa and Coconut Recipe

 Ingredients: 1/2 cup freshly or frozen coconut (grated) 1/3 cup cooking oil 5 cloves of garlic (finely chopped) Salt to taste Pinch of asafoetida 2-3 chillies 1/2 onion (finely chopped)  150g saijan or moringa (cleaned and washed) Methods: 1) In a heated pot, add cooking oil. Once, the oil has heated, add onions and chopped garlic. Saute' onion and garlic until light brown. 2) Add, the saijan leaves, coconut, chillies, salt to taste and asafoetida. Mix to combinel, cover with a lids and cook for 5 minutes (medium-to-low) heat. Ensure to stir, occasionally. 3)  Serve the cooked saijan and coconut with freshly made roti.
