Simple Coconut Cake Recipe

Ingredients: 1 cup desiccated coconut 1/2 cup caster sugar 1 cup milk (liquid) 1 cup self-raising flour Sprinkle icing sugar for serving Methods: 1) Preheat oven to 180 degrees. Grease a baking tin with melted butter or margarine. 2) In a mixing bowl, combine all the ingredients and stir until well combined. Ensure that there are no lumps. 3) Transfer into the greased cake tin. Give a shake to level the mixture and bake for 40 minutes until golden brown. 4) Cool completely and sprinkle icing sugar. *Serve with tea or for dessert.        

Healthy Tuna Salad Recipe

Ingredients: 200g tuna flakes 1 cup lettuce (coarsely chopped) 1 cup cucumber (chopped in cubes) 1/2 cup carrot (chopped in cubes) 1/2 onion finely chopped 1/2 chilli finely chopped 1 tablespoon lemon juice Salt to taste Methods: 1) In a mixing bowl, add all the ingredients and mix well. *Serve immediately   

Red Chilli & Tamarind Pickle Recipe

Ingredients: 100g chillies  100g tamarind Pinch of cumin Pinch of fennel seeds Pinch of black mustard seeds 15 curry leaves 3/4 cup mustard/ canola oil Pinch of asafoetida Salt to taste 1 teaspoon turmeric powder 1 tablespoon masala   Methods: 1) In a heated pot, add oil. Once, oil has heated add cumin, black mustard seeds and curry leaves. 2) Add tamarind pulp, masala powder, turmeric, asafoetida, salt to taste, stir and cook for a minute. 3) Add chillies, stir and cook for 2-3 minutes. 4) Ensure to cool pickles entirely before storing in an air-tight container. Cover chillies with oil for more extended preservation. *Serve pickles as an accompaniment with your meals.     

Simple Vegetable Soup

Ingredients: 2 carrots (chopped) 1 bunch of cabbage (coarsely chopped) 200g broccoli  2 cloves of garlic 4 cups water 1/2 onion (finely chopped) Salt to taste Pinch of asafoetida Methods: 1) In a pot add water, cabbage, carrots, broccoli, garlic, salt and asafoetida. Give a quick mix and bring to boil. 2) Simmer for 5 minutes. * Serve warm   

Fried Spanish Mackerel or Walu

Ingredients: 600g Spanish Mackerel/ Walu 1/4 cup lemon juice 8 cloves of crushed garlic 2 teaspoons rice flour 3 crushed chillies Salt to taste 2 teaspoons turmeric powder 1/2 tablespoon masala powder Pinch of black pepper Pinch of asafoetida 2 cups of canola oil for frying Methods: 1) After chopping, cleaning and washing fish, add 1/4 cup lemon juice. 2) Then add the rest the ingredients and mix, well. 3) Marinate for 30 minutes.  4) Add oil in a heated frying pan. Once the oil has adequately heated, add the fish pieces and fry until golden brown. Drain oil and transfer fish into a plate. *Serve with your favourite root crops or rice and dhal.      

Sausage Fried Rice Recipe

Ingredient: 560g chicken or lamb sausages (chopped) 10 cloves of garlic (crushed) 2 eggs 1 cm ginger 1/2 onion  1 cup  mixed vegetables  A bunch of cabbage (coarsely chopped) 1 chilli (finely chopped) 5 tablespoons light soy sauce 1/2 tablespoon dark soy sauce Salt to taste Pinch of chilli flakes Pinch of pepper 4 cups of cooked rice  1/3 cup olive oil Methods: * Marinate and fry chicken sausages 1) In a mixing bowl, add chopped chicken sausages. Add 2 tablespoons light soy sauce, pinch of black pepper & salt, 5 cloves of crushed garlic and 1/2 cm ginger. Stir all the ingredients with sausages and marinate for 15 minutes. 2) Add 1/3 cup oil in a heated frying pan and fry sausages until light brown. Drain oil and set sausages aside. *Let's prepare and make fried rice 2)  In the same frying pan, add more oil is need arises. Add onions, 5 cloves of garlic, 1 chilli and 1/2 cm ginger. Saute' and cook until light brown. 3) Add 2 egg

Pumpkin Gulgula Recipe

Ingredients: 1.25 cups pumpkin (riped) Water  1/4 cup water 2 cups flour 2 teaspoons baking powder 1/4 cup sugar 2 tablespoons milk powder 1 teaspoon ghee 2 cups canola oil Pinch of cardamom    Methods: 1) Add pumpkin in a pot. Add enough water to cover the pumpkin. Cook over low heat until pumpkin becomes soft and mushy. 2) Transfer pumpkin in a mixing bowl (cool completely) and add flour, baking powder, sugar, milk powder, ghee, 1/4 cup water and cardamom powder. 3) Mix all the ingredients and set aside for 20 minutes.  4) In a frying pan add oil. Once the oil has heated, add the mixture. 5) Add mixture using your hand or spoons and fry over low heat until gulgula turns light brown. *Serve warm or cold for tea or dessert.      

Easy Butter Chicken Recipe

*Preparation of Chicken Ingredients:   400g chicken breast pieces 1 teaspoon salt (may vary with your taste) 1 teaspoon chilli powder 5 cloves of crushed garlic Pinch of black pepper 3 tablespoons olive oil Methods: 1) In a mixing bowl, add chicken pieces, salt, chilli powder, garlic and pepper. Mix all the ingredients with chicken pieces. 2)  Add oil in a heated frying pan. Once oil has heated, add chicken pieces. Stir and cook until chicken pieces have turned light brown, then remove chicken pieces and set aside. *Preparation of Paste Ingredients:   1 teaspoon cumin seeds 2 tablespoon olive oil 1 onion (coarsely chopped) 1/4 cup roasted cashew nuts   Methods: 1) In the same frying pan, add more oil. Add cumin seeds and splutter. Then, add onions and cashew nuts. Saute' until onions have turned light brown. Then, transfer all the ingredients into a blender bowl and blend into a paste.
