Chocolate Muffin Recipe

Ingredients: 2 teaspoons baking powder 2.25 cups self-raising flour 1/2 cup cocoa powder 1 cup sugar 3/4 cup choc chips 1/2 cup vegetable oil 2/3 cup milk 2 teaspoons vanilla 2 eggs Methods: 1) Preheat oven to 180°C. Grease 2x6 muffin pans. 2) In a mixing bowl, add flour, baking powder, cocoa powder, sugar and choc chips and mix to combine. 3) In a mixing jug, add vegetable oil, milk, vanilla and eggs. Mix to combine with a fork. 4) Make a well in dry ingredients, and pour the milk mixture. Fold to combine. 5) Add 2 tablespoons in each muffin holes. 6) Place into the oven and bake for 25 minutes. *Cool completely and serve.      

Cheese Muffin Recipe

Ingredients: 1 cup self-raising flour 1/2 teaspoon baking powder 2 tablespoons sugar 1/2 cup baby spinach (coarsely chopped) 1/4 cup grated cheese 1/2 cup buttermilk 1/4 cup olive oil 1 egg Methods:  1) Preheat oven to 180°C. Grease 6 holes of muffin pan. 2) In a mixing bowl, add flour, sugar and baking powder & mix to combine. 3) Also, add spinach and cheese & mix to combine. 4)  In a jug, add butermilk, oil and egg. Whisk with a fork until well combined. 5) Make a well in the flour mixture and add the liquid mixture. Ensure to mix, well 6) Add 2 tablespoons mixture into each muffin pan holes. 7) Palce into the oven and bake for 15-20 minutes, until muffins turn golden brown 8) Remove from oven, cool and serve with margarine or butter for breakfast.  

Classic Chicken Pizza Recipe

Ingredients: *Pie base 2 teaspoons yeast 150ml warm water 1 teaspoon sugar 2 cups plain flour 1 teaspoon salt 1 teaspoon olive oil  *Chicken Filling 3/4 cup shredded chicken 1/2 onion (finely chopped) 1/2 red capsicum (chopped) 1/2 green capsicum (chopped) 2 cups pizza cheese 1 cup pizza sauce   Methods:  1) Preheat oven to 180°C. Grease a pizza tin or pan. *Pie base 2)  In a jug, add warm water, sugar and yeast. Mix and set aside for 10 minutes until frothy.  3) In a mixing bowl, add flour and salt and mix well. Make a well and add yeast mixture in small amount. Mix with a spoon to form dough, add oil and knead, well. Cover dough with a cloth and place over warm surface for 10 minutes. 4) The dough has risen, beautifully. Knead dough for 2-3 minutes. Roll over flour dusted board. Chicken Bread Pizza Recipe

Ingredients: 8 bread slices (white/ wholemeal) Margarine/ butter 1/4 cup pizza sauce 1 cup pizza cheese 1/2 capsicum (finely chopped) 1/2 onion finely chopped 3/4 cup shredded chicken Methods:    1) Preheat oven to 220°C. 2) Spread margarine/ butter to bread slices. 3) Apply pizza sauce in each slices, then add onions, capsicum and chicken pieces. Finally, top-up with pizza cheese. 4) Place into the oven and bake for 10 minutes. *Serve chicken bread pizza warm.  

Condensed Milk Cake Recipe

Ingredients: 150g  butter 1/3 cup sugar 1 teaspoon vanilla 2 eggs 2/3 cup condensed milk 1 cup plain flour 3/4 cup self-raising flour 2 tablespoons lemon juice Methods: 1) Preheat oven to 180°C. Grease a cake tin and set aside. 2) Beat butter and sugar until light & fluffy. 3) Add vanilla and eggs and beat, further. 4)   Then, add condensed milk and lemon juice and beat further. 5) Add plain flour and fold in clockwise direction. 6) Add self-raising flour and also fold in clockwise direction. 7) Transfer mixture into the greased cake tin, spread evenly and  place into the oven. 8) Bake for 30 minutes until cake turn light brown. *Cool completely and serve for tea or breakfast.  

Classic Chocolate Cake Recipe

Ingredients: 1 cup flour 1 cup sugar 125g margarine 1/4 cup cocoa powder 1/2 cup water (room temperature) 4 tablespoons milk (powdered) 2 teaspoons baking powder 1/2 teaspoon baking soda 2 eggs 2 teaspoons vanilla  Methods:   1) Preheat oven to 180°C and grease a cake tin. 2) In a mixing bowl, add flour, sugar, margarine, cocoa powder, water, milk, baking powder, baking soda, eggs and vanilla. Beat the mixture (clock-wise direction) until creamy and whitish. 3) Transfer the mixture into the greased cake tin. Shake to level the mixture. 4) Place into the oven and bake for 30 minutes or until skewers come out clean. 5) Remove from oven, cool completely and serve with whipped cream and ice-cream.     

Custard Cake Recipe

Ingredients: 125g butter 1/2 cup milk 1 teaspoon vanilla 3 tablespoons custard powder 3/4 cup sugar 2 eggs 1 cup self-raising flour Pinch of salt  Methods: 1) Preheat oven to 180°C and grease a cake tin. 2) In a mixing bowl, add butter, milk, vanilla, custard powder, sugar, eggs, flour and salt. And beat for 3 minutes, until the mixture turns pale and whitish. 3) Transfer mixture into the greased cake tin. 4) Place into the oven and bake for 45 minutes. 5) Cool completely and serve.   

Classic Bread Pudding Recipe

Ingredients: 1 cup milk 1 cup thickened cream 6 slices of bread 1 teaspoon vanilla Pinch of salt 3 eggs 1/2 cup sugar 50g butter  Methods:  1) Preheat oven to 180°C and grease a cake tin. 2) Place the pot over low heat and add milk, cream and vanilla. Mix to combine and bring mixture to simmer, then remove from heat. 3)  Then, beat eggs and sugar until well combined. Add the prepared mixture and beat further to combine. 4) Apply butter on bread slices on both sides and arrange bread slices on the greased cake tin.  5) Gently, pour the mixture over the bread slices. Then, place the cake tin over a bigger cake tin. Pour hot water into the bigger cake tin until half full. 6) Bake pudding for 30 minutes. 7) Cool completely, sprinkle icing sugar and serve.
