Chicken Chow Mein Recipe


Ingredients:

*Marinate Chicken

350g chicken breast (chopped)

2 tablespoons light soy sauce

6 cloves of minced garlic

Pinch of black pepper

Pinch of salt

1/3 cup canola oil

* Preparation for Sauce

2 tablespoons (light) soy sauce

1 tablespoon (dark) soy sauce 

1 teaspoon corn flour

2 tablespoon hoisin sauce

2 teaspoon chicken stock powder

1/2 cup water

Few drops of seasame oil

Pinch of black pepper

2 tablespoon oil

2cm minced ginger

Pinch of chilli flakes (optional)   

*Preparation of noodles

125g chow mein noodles

3 cups water

*For stir-fry

375g stir fry vegetables (you can add vegetables of your choice)

2 tablespoons oil

1 onion  

1/4 cup olive oil

Garlic (1cm) and ginger (8 cloves) paste 

1/3 cup water

Spring onions

Methods: 

*Marinate Chicken

1) In a mixing bowl, wash and add chicken pieces. Add all the ingredients, mix well and marinate for 15 minutes.

2) Add oil into a heated frying pan. Once oil has heated add the marinated chicken and cook until light brown. Please ensure to stir occasionally. 

* Preparation for Sauce

3) All the ingredients for the sauce preparation, stir properly and set aside.

*Preparation of noodles

4) Add water into a pot and bring to boil.

5) Add noodles, boil noodles until well done. Drain water and immediately wash noodles in cold water and set aside.

*For stir-fry 

6) In a heated wok or frying pan add olive oil. Add minced garlic and sate' until light brown.

7) Then, stir fry vegetables (add water) and cook to your desire.

8) Throw in chicken pieces and prepared sauce and stir. Also, add noodles and stir and cook for a minute.

*Mix all the ingredients and serve warm.

Pineapple Pie

Ingredients: *Pastry  125g butter 1/2 cup sugar 2 eggs 2 cups flour 2 teaspoons baking powder   *Pineapple Filling 1 medium pineapple (grated/chopped) 1/4 cup water 1 teaspoon butter 1 lemon 3 tablespoon custard powder 1 cup sugar    Methods: *Pastry 1) Preheat oven to 180C. Grease a cake tin with margarine or butter. 2) In a mixing bowl, cream butter and sugar till mixture turns whitish. Add eggs and beat further. 3) Fold flour and baking powder. Transfer mixture unto the greased cake tin. Spread mixture over the length of cake tin with your finger. Custard Pie

Ingredients: Pastry  1/2 cup sugar 125g butter 2 eggs 2 cups flour 2 teaspoons baking powder Custard Fillings 1.5 cups milk 3 tablespoons custard powder 3 dessert spoons sugar   Methods: Pastry Preheat oven to 180C. Grease a cake tin with margarine or butter. In a mixing bowl, cream butter and sugar till mixture turns whitish. Add eggs and beat further. Fold flour and baking powder. Transfer mixture unto the greased cake tin. Spread mixture over the length of cake tin with your finger. Use a fork and make tiny holes all along the pie pastry. Place pastry into the oven and bake for 10 minutes till golden brown. Remove from oven and cool the pastry.   Fillings   In heated milk add sugar and custard powder. Keep stirring till the mixture turns thick and creamy. Pour mixture on the pastry and spread evenly. Cut pie pieces into desirable sizes. Serve custard pie with tea or as a dessert.
